Copper & Steel runs on one piece of equipment we refuse to compromise on: the hearth. Every cut is dry-aged in-house for a minimum of 30 days, then finished over live oak and copper-lined coals. No sous vide shortcuts, no finishing sauces hiding a bad sear.
We built the room the same way we build the plate — exposed steel, warm copper, low light, no distractions from what's on the fire. Seven dishes, forged the hard way, every single night.
